How do i have email messages stay marked as unread until i open the email, as
opposed to having it marked as read as soon as i view it in the reading pane?

You HAVE opened the e-mail when you view it in the reading pane. So if you
don't want to open the e-mail until you double-click on it to open in its
own window, don't show the reading pane.

Adjust the Reading Pane settings. Tools>Options>Other>Reading Pane.
