Hello Ben,
From the title in your post I gather that you may be running SUS SP1 in
your environment. With SUS in the picture you should be able to
a) update all clients to the same version
b) select the appropriate policy settings to accommodate your specific
needs.
In General we recommend getting the appropriate updates synchronized and
approved on the SUS server and then install them on the client systems
throughout the environment. The SUS deployment guide will assist you in
getting all setup as needed. Please refer to
http://www.microsoft.com/windowsserversystem/sus/default.mspx and select
the link "Get Guidance for Deploying Updates with SUS" for a complete set
of documentation (around 90 pages)

../Some user's get to see the Globe update option and some
../user's don't. They all have local admin rights and all
../user/pc's get updates even if the notice is not seen for
../updates. Does this mean that the updates sometime happen
../while the user isn't logged in? The oldest Win Update
../Client ver that we have is 5.4.3630.2550. Is there a way
../to set all pc's not show notification update, current
../settings are AUTOMATIC, schedule check & install updates
../daily.
