What is the code for the symbol > appearing in plain text email?

Ummm. Shift+. (period)?

did you look at the character map (Start menu, run, type charmap or use the
Insert, Symbol dialog in Word.)

If I am in an email & go to search on the edit menu, the find & replace box
appears. If I click on "special" & choose "paragraph character", the code
that appears is ^v. I know there is some code for the character > that was
supplied to me through this source 3 or 4 years ago but I forgot what it is.
If I can get the code, I can search that character or symbol in text
formatted emails & simply delete them from the body of the email. Let me
know if you can provide that code.

AFAIK, > is not a special character and you won't need an escape command to
search for it in plain text and RTF formatted email. If you are searching
HTML email as text, you may need the html code - that is >

There is also a command in word to reformat email - format, autoformat.
