Plain Text Email Signature - Where to format?

When I reply to a plain text email my signature is changed from the default
HTML signature to a plain text signature. That's fine. HOWEVER, the plain
text signature that is inserted is NOT the plain text email that I have
formatted that is listed in my Options>Signatures.

Where is Outlook finding this plain text signature? It's an old signature
but I can't figure out how to change it. HELP! This is driving me crazy.

paste this line in the address bar of windows explorer or the Start menu's
start search field (Vista)
%USERPROFILE%\Application Data\Microsoft\Signatures

find the txt version of sig and edit it.
