signatures when replying to email

when I receive a plain text email an old signature of mine comes up
automatically that is not current. In the signature section I have my
current one built in but it only comes up when replying to html emails. How
do get rid of the old signature in plain text emails?

go to %appdata%/microsoft/signatures and open the text signature - is it the
correct sig or the wrong one? Edit it as needed.

Delete the txt version of the signature in %AppData%\Microsoft\Signatures and
let Outlook recreate it from the HTML version.
