When replying or forwarding to an email that is plain text
the signature that I have attached to the email loses its
font and colour.

Does anyone know a way where the signature will keep its
font and colour when you reply to a plain text email ?

Outlook always replies in the same format as the incoming item. Plain text mail does not suppport text formatting. You would need to change the format of the reply message to HTML.
