Locked Document & Spell Checking

I have set up templates for people in my office to use for
our common correspondence. The problem I am having is that
when the document is locked so the users can tab between
fields, use check boxes etc, word no longer spell checks.
In the absence of wavy red lines people are assuming their
spelling is correct and we are sending out documents full
of mistakes.

I tried selecting the template and using "set language" to
turn off the "do not check spelling and grammar" but as
soon as I lock the document it stops checking spelling.

What can I do?
