Keeping a 2nd copy of all incomming & outgoing Emails with Outlook 2003

Is it possible to have a 2nd 'Sent Items' that is hidden from view.

This is my problem...
I have a small office, a server (microsoft server 2003) and 3 windows XP
machines. All networked together.
When an email comes in it is routed to the reletive machine.
there are emails being sent from machine to machine within the network as
well.
I want to log and save ALL the emails sent from every machine. But i don't
want it to be visible to the users.
Can Outlook 2003 do this? or will i need any 'Email spy' software? if I need
extra software, is there any that is recomended?

Yeh, sorry its the Small Business Server 2003.
Every computer has a copy of Outlook 2003 and the Email is PoP3.
