Is there any way to recover data within a PST file?

Need help. Have a pst store on the c drive so no back up. User deleted a
couple of folders within her pst folders. Basically she has like 30 folders
in her pst and deleted 3 of them. Now she only has 27 folders. She emptied
out her deleted items so the 3 folders are nowhere to be found. Is there any
way to recover these folders??

That's not good, if you're supposed to be supporting this. Company data
belongs on the server....I'm presuming you have one. Of course, you can't
put your PST files on the server & have users access them from there - it
isn't supported and causes problems. At the very least, a simple batch file
that copies the PST file to the server at night would be a good idea - so
the data can be backed up centrally from the server itself.
