In older versions of Ms Word the insert key would toggle between insert and
type over. I am no using word 2007 and my delete key doesn't have any
affect on my typing. How do I change to type over?

You can right-click the status bar and then, on the context menu, click to
add a check mark next to "Overtype." Click the option whenever you want to
switch between Insert and Overtype modes.

Thanks
Word 2007 is not as simple as 2003.
I have another problem I will post

This is an issue with the default settings of Word 2007. In Office Button |
Word Options | Advanced: Editing options, check the box for "Use the Insert
key to control overtype mode." This will restore the traditional function of
the Insert key.

That is a great tip. I cannot find the Office Button. Where is it and how
do I get to it?

The Office Button is the big round button in the upper left corner
(sometimes called the "pizza button").
