Unfortunately some options will still only print to the default printer.
Depending upon what you are doing I would recommend either changing the
default printer or following Kathleen's solution.
If you find that the printer settings are grayed out, try this instead:
double-click the email header to open the email in its own window, then
click File -> Print. You should now have full access to printer settings.
If I recall correctly, this quirk applies to HTML-formatted emails only.
