How do I format outgoing mail so I don't see my signature?

I want to play a prank on a coworker by adding a photo on her outgoing
messages, but I don't want her to see the photo when she is composing an
e-mail. Outlook used to be able to do that, but in the current version, I
don't see it as an option.
