how can I edit a scanned and saved text item

After scanning in a text doc. and saving it I cannot edit part of doc. how do
I.
 
If you scan a document, unless you use OCR software (which includes
Microsoft Document Imaging - included but not automatically installed with
recent versions of Office) then the scan is a graphic.
