I type or click =, I then click the countif button or the arrow leading to
the countif and other choices, the error message then comes up that excel had
encountered a problem and needs to close and excel closes not saving any data
entered.

It sounds like you are using a generated button, driven by a macro? This
certainly is not a standard Excel option.
What happens if you type in you're formula without clicking this
Countifbutton?
If you click on <Alt><F11>, can you see any code to generate a menu item?
If so, clearly something went wrong in the macro, and you'll have to either
repair, or delete it.
