Creating templates

I am creating a template with multiple master pages. Instead of "click to
add title" I would like to put in the title for each master page so that all
the pages under that master have a fixed title. Can this be done?

On the Title Master Page I would also like to change the subtitle text from
"click to add subtitle" to "click to add class e.g. Primary 2". Is this also
possible?

Is it possible in 2003 as I am reluctant to upgrade in case the users on PP
2003 will be unable to use the template.
