All Programs

The "All Programs" screen from my start window is totally full and the
most recent programs installed cannot be seen. How can I organise
this?

Create folders and move similar entries into these folders. Right click
Start, choose Explore all Users. Create the folders here and in the
C:\Documents and Settings\All Users\Start Menu\Programs folder, then
drag what entries you want to the folders.
 
Right click on "Start". Open "All Users". Open Programs. Add a new folder
called "Applications". Add a new folder called "Utilities"

Now, drag the existing icons to where you think they belong. You can, of
course, use any names for the folders you create.

Most knowledgeable people have only 6-10 folders visible when they click on
"All Programs". Everything else is nested within.

Yes, but if you have Norton AntiVirus, you can't move its menu items
without it screaming every time you start Windows. Everything else can
be grouped in subfolders. I usually have ones for Music & Media, Image
Editing, Malware, Web Tools etc.
