You know, it may just be that I am a blind bat! but I seriously cannot find a
way to create a 2nd version of a document. Surely it is a matter of doing a
save as, new version, but there doesn't seem to be any option for it.

Can someone please enlighten me?

It is that simple. Click on the Office button in the upper left corner.

Hi Kylie,

If you're looking for the File=>Versions equivalent of earlier editions of Word it's gone in Word 2007. That collaboration
functionallity has been moved to MS Sharepoint 2007.

If you're trying to save to a different file name then you can use
Office Button=>Save As
and use a different name.
