why don't I have the option to choose the domain I want to connect to?

What deternins if you have the option to choose the domain I want to connect
to?
The network I'm on is a Peer to Peer, but the one I want to connect to is
Domain.

On the first screen the only option I have is to enter a computer name.
After I press OK it asks me for a user name and password, but I still can't
enter a domain...

What am I missing?

Well in order to login to a domain the computer and user must have an
account in that domain. Does that answer your question?

a) Your computer must be running XP Pro, not Home, to join a domain
b) Someone must create a computer account & join your computer to the domain
c) You can belong to only one domain (or workgroup) at a time - you can't
pick & choose.
d) You do not have to belong to a domain or log into it just to access
resources on it - such as follows:

Log into the workstation as usual
Map a drive to a domain resource, providing credentials....
net use x: \\servername\sharename /user:DOMAINNAME\username <enter>

Then any subsequent connections won't prompt you.

Are you a User/member of the domain? simply put domainname\username in
the user anme slot and your domain password in the password box.
