Why does the font change when replying to a message?

I am able to change the font size and style in TOOLS>OPTIONS>MAIL
FORMAT>MESSAGE FONTS but the color will not default to black; it continues to
change with each "reply" or "forward".

Changes to what? Always the same color or always any random color?
Which message format is the received message in?
Which version of Outlook are we talking about here?
Are you using Word or Outlook as the email editor?
Does changing it make a difference?
