Teaching Outllook

I am a high school teacher and would like to teach Outlook, but I am not allowed to have the program in my lab. Is there something out there that I can use to help me teach this valuable tool to my business students?

Make lots of screenshots and create a Powerpoint presentation about it? If
you are not allowed to have Powerpoint either you must save the presentation
as webpage.
Quite strange that you can't have the program if you need to teach it :-S
