Ctrl+A to select the entire document, then go to Tools | Language | Set
Language and make sure that the correct language is selected and the "Do not
check spelling or grammar" is NOT checked.

First, the spell checker is only a tool. It does not substitute for proof
reading. It will flag words as misspelled because it does not recognize
them, even if spelled correctly. It will not flag a word as misspelled if it
is the wrong word. i.e. form / from
Second, it is likely that the words not being checked are formatted for no
proofing.
Open one of the documents and press Shift-F1. Then click on one of the
misspelled words. Word will display the formatting applied to that Word (and
the source of the formatting).
If it says "no proofing" or "do not check spelling and grammar" you need to
modify the language setting. Select your entire document (Ctrl-A) and use
Tools > Language to change the setting.
