Setting up flags in MS Outlook Inbox

I have gotten as far as getting the flags into a separate tool bar, but can't
figure out how to name and use them for the purpose I'd like them to (ie..
red flag for urgent, blue for meetings or whatever.

Right click on the toolbar area and select Customize. Then, right click on
your flag button, again, select customize. In the name field, give it the
name that you want. Do this for each of the flags you want to customize.
