Setting Default Encoding for Reading Messages

Hi. I receive a lot of e-mails in Chinese and would like to view them.

Currently, I have to open each e-mail and use the
view->encoding->Chinese(Big5) to encode them properly.

Is there a default setting somewhere I can set to allow me to encode all the
messages I receive so that I can view them quickly?

(Microsoft Help does offer ways to set the default language for encoding
outgoing messages. But sadly, nothing on incoming ones).

Thank you!

What version of Outlook are you using and what mail account type?
