I installed the above update per microsoft's
recommendation on a dell 8200 running windows 2000 service
pack 4. Upon reboot the computer can no longer access the
hard disk. I receive an error message stating, "Hard disk
inaccessible, run anti-virus software, run chkdsk/f, etc.

How do I undo this install and return to a previously
working configuration?

I got the exact same thing here. I am also looking for a solution. I
tried ERD but it does not see a winnt installation to repair. I am
probably looking at a reinstall and restore from backup.
