Seach IMAP folders for Emails to Contact

I am trying to figure out a way to easily find all activity (incoming and
sent emails) to certain people.

I want this functionality from emails that are in subscribed IMAP folders.

I am using outlook 2007 and when i go into a contact I click on the
activities and I can see the emails to and from that contact. This only
works though if the emails are stored in the local folder on the computer. I
will regularly be checking and sending email from multiple locations so I
will be using the IMAP folders as I want eveything to be in sync. Keeping
everything in the IMAP folders, how can I search for emails to and from a
particular contact?

Create a search folder in the IMAP folder set.

can you please elaborate? the search folder should be in the imap account
and not the personal folder?

im not looking to do this for only one person, I want the ability to do this
for everyone in my Contact list (very large) i want to be able to to just
click on each persons name and see all email activity. would a general
search folder still be the best way to go about this and how exactly do i set
it up to do what I'm looking for?

Any data store in Outlook 2007 will automatically contain a "Search Folders"
folder. IMAP accounts have one. I added my Gmail account to Outlook 2007
and right below the IMAP "Inbox" was "Search Folders"

Clearly I misinterpreted what you were asking. There will be no Journal
folder for IMAP accounts, but you can still use a Search Folder to look for
all messages to or from a particular contact. It won't be as easy as
finding activities in the default folders.
