What is the difference between a residential gateway and
a hub? I am using a linksys cable modem and a linksys
router to serve as the network connection amongst several
computers in my home.

When you have your hub uplinked to the cable modem with
all the computers connected directly to the internet
there is no residential gateway. If you set one of your
computers (Host) up directly to the modem with one
eithernet card and your hub or router to the host with a
second eithernet card, then the other computers (Clients)
connect to the internet through the second eithernet card
(Gateway) via the hub.

The Gateway is the best way to connect to the internet
because of the added protection you can get.

a hub is simply a limited device which gives link capability of devices on a
single subnet, no services no gateway.

an RG provides link capability of devices on a single subnet but also acts
as a router to provide gateway services to other subnets in addition to
providing additional local network services (e.g. DHCP, DNS .etc)
