Publish selected folders

How can I edit a website locally that has many folders, but don't want those
folders to publish at all? I am aware that you can right-click on a page and
select don't publish, but I would like to do this with the entire folder.

You can do that with Jimco's Selective Publish add-in.

Or right click the folder to convert to web (subweb) and don't publish including subwebs
