is there any way to prevent a person that has proxy to anothers e-mail from
seeing something you send to the other person?

Well another employee in my office has proxy to my bosses e-mail and every
time I send an e-mail to him she is also able to see what I sent. Is there
anyway to get around her being able to see what I send to my boss?

That is still not an explanation. What do you mean by mail proxy? Do you
mean shared instead? How are the permissions set up?
Version of Outlook? Help-> About
Type of account? HTTP, POP3, IMAP, Exchange, Other?

Assuming Exchange; your boss has set her as a delegate so that means you
can't. You can ask your boss if she has also permissions to read private
items. If not; you can set the sensitivity of your e-mail to private. If she
has that permission ask your boss on how to he wants to be contacted him
about private issues without informing his delegates.
