Page x of y keeps changing

When I insert 'Page x of y' in either my header or footer and when I close
and reopen the document, either the x or y changes to an incorrect number.

IE: I have a 3 page document and I insert the footer 'Page 1 of 3', close
document at 10:00AM, open same document at 10:30 and now it reads Page 3 of
2. What is going on?

I have to go into the header and/or footer and re-insert ths info every time
I re-open the document. This has always happened to me and I thought it was
just me doing something wrong, but now a co-worker and I have discovered it's
happending to both of us. Can anybody help? I would really, truly,
appreciate it.\
