OUTLOOK EXPRESS

keeps asking me every time I open it if I want to make it
the DEFAULT mail server...and I click YES...!!!

and it still keeps asking me over and over and over
again...anyone have any answers.

windows xp...this happened after I did some updates to
MICROSOFT OFFICE

If you updated Office then Outlook probably made itself the default mail
server and Outlook Express is unable to switch it back to itself.

Check the preferences/options in Outlook.
