outlook 2007 language encoding?

How to change the language encoding of a newly composed email? In outlook
2003, there is an encoding menu that I can choose from (e.g. utf-8, utf-7,
chinese traditional, english (iso), ...). In 2007, I cannot find this menu.

Similarly, when reading an email with foreign encoding, how do I manually
select an encoding for reading? Sometimes auto-detection does not work
correctly.

Same place as before;
Tools-> Options-> tab Mail Format-> International Options

To override for a single message while composing, press the expansion button
in the Options section on the Message tab.

To override for reading a message, double click to open the message and then
use the Other Actions-> Encoding menu

Thanks. Would never have found them without your clues, despite being in the
"same" place (that looks and feel different, other than the tools menu).

Well, actually meant that the general option was still in the same place.
For the others it indeed "similar" but not the same ;-)
