I just got XP Pro and tries to t a clean install and now when I restart my
computer it asks me which operating system I want to use and both are Windows
XP Pro. How did I do this and how do I set it up so that there is only one
instance of XP Pro on my computer.

Mike;
Can you select each and boot successfully to each?
If so, you installed Windows XP twice.
Perform a Clean Installation again:

Be sure to delete the partitions.

If you can only log into one:
Start/Run
Type "msconfig" ENTER
Click Boot.ini tab
Click "Check all boot paths button"
That should fix it.
