If you run MS Backup on a system with Exchange, there is
an option to check for backing up the Exchange store.
Veritas (BackupExec) sells an optional component for
BackupExec for backing up Exchange while it is running.
My question is, since MS Backup has that option, is it
actually doing it?

If you run NTBackup on an Exchange server (or on a server that has the
Exchange management components installed), you get the option to run a full
online backup of the Exchange store, which will purge committed logs.

If you want to run Veritas backup instead, you will need their agent in
order to do this - don't do brick-level backups with it, just do a full
online backup of your stores.
