Locating "Home Folders"

I attempting to create a backup strategy on a computer with many, many
users. Is there a way I can referece all the "My Documents" folders and all
the "Desktop" folders without typing in "C:\Documents and
Settings\(USERNAME)\(USERNAME)'s Documents" and so on?

Look at Acronis True Image Home, version 10. That will create a compressed
image of the drive which can be stored on an external, USB connected hard
drive. It has can do file backups by file types, as well as locations.
