List Styles?

In Word 2003,
'list styles' are available, but they are very patchily documented.

A question about them - they seem to define number for up to
9 nested levels of numbered list: but if I have some text in my document,
how do I apply the list style so that Word knows which lines belong
to which level?

For example if I have a numbered procedure along the lines of ...

1. Step one
2. Step two
(a) maybe this
(b) or alternatively that
3. Step three

.... before applying the list style, I'd have 5 lines of text, each closed by
a Pilcrow (paragraph mark) (carriage return)
How do I apply the list style and get word to put lines 1, 2 and 5 as top
level,
and lines 3 and 4 and next level?

Select them all and apply outline numbered style, then select the (a) and
(b) etc. ones and indent them using Increase indent.
