how do you know when a document was created

I have been given a letter which I was told was sent two months ago. I
suspect the letter was only created after I asked the author questions about
the subject. The author is an employee of mine and was using a company
computer.
 
You could look at the creation date in the document Properties, but it won't
prove anything.

There is no way to prove, from a document when it was created, without
keystroke logging spyware pre-installed on the PC and that won't tell you
when the document was mailed. You can, as Suzanne suggests, check the dates
stored in the document, but they can be altered and only tend to suggest
when the document was created. Forensic disc analysis is possible, but
expensive, and still won't tell you when the document was mailed. Unless you
have some other evidence, to corroborrate your suspicions, you need to tread
very carefully, supported by legal advice.
