How do I setup a hotkey to insert the date and time in WORD?

I would like to hit one key, say the F1 key and this would insert the dat and
time, how can I set this up?

The built-in keyboard shortcut for inserting a DATE field is Alt+Shift+D.
This will insert whatever date/time format you have selected as the default
in the Insert | Date and Time dialog. Note that this will be a field that
will update automatically. If you want it to be static text, you will need
to immediately press Ctrl+Shift+F9 to unlink it.

If you do decide to assign a single function key shortcut to this function,
I would strongly advise against using F1, which is the Windows default for
accessing Help (works in all Windows-compliant applications).
