How do i set up a quarantine folder to send virus threats to

You can create a folder like any other folder for that. It's up to your
virus scanner solution how to direct the messages to that location.

Scanning incoming messages with an antivirus program doesn't make you safer
and can interfere with the proper receiption of mail.

My mail server marks messages with *****VIRUS***** or *****SPAM***** in the
subject.
While it may not offer me any extra protection, it sure is nice to have them
directed out of my Inbox folder with a rule. I just redirect them to the
default Junk E-mail folder; definitely don't need an extra folder to monitor
;-)

Since the OP did not post any details, it is hard to determine its
intentions or the origins of the messages that he/she wants to filter out.
If this is a client level filter, then you're definitely right; those
integration components should be uninstalled.

You are, of course, correct and your value lies in the fact the scanning
program is server-side. I assumed client-side scanning, which is probably
unwarranted without additional information.
