How Do I Rename Email Addressor For Incoming Mail Preview

How do I change the "nickname" for an email addressee that is listed in my
address book so that it reflects the name that I wish to identify that
person and no the "identity" under which that person may have sent out
their email.

For instance, lets say my incoming correspondent is named Mary Doe. Her
email address is (e-mail address removed). When her email arrives it lists her as
(e-mail address removed). SHE then selects to lists her identity as Mary. All of her
incoming mail is there for listed as one of two dozen Mary's in my address
book. How do I have her renamed "Mary Doe" for all incoming mail?

The From field is determined by the sender, not the recipient.
If you are finding that Outlook is changing the From field that the
recipient chose (look at the header to see that) to the resolved (familiar)
name in your Contacts Folder, you can try to change the Display As field.
Since you did not post your Outlook version or mail support mode, I cannot
tell you how.

What about creating folders and setting rules to move the mail to the
relevant folder on receipt?
