How do I disable pre-sets for outlines so I can outline manually?

I often use lettered/numbered paragraphs and subparagraphs. Whenever I want
to proceed as I choose, Word "defaults" try to force me to use Word's system,
and sometimes messes up my choice of mix of indents, etc. I simply want to
number and/or letter paras, subparas, etc. as I choose, and also make my own
choices about how I will or will not indent each, without Word's
interference. Thank you for your advice --
 
If you use Word's built in formats via the toolbar icons, you are letting
Word make your decisions about styling.

Use proper Styles instead. You can use the built-in styles and tailor them
to your needs, or you can define your own.

Select styles via Format > Styles (exact wording depends on version) or pick
from the list on the formatting toolbar.

Or you can simply do this:

Tools | Auto Correct Options | Auto Format and Auto Format As you Type

Deselect everything under "Apply As you Type" and "Apply" under Auto Format.
