How do I change my sending email address on demand

I have two email addresses and am using Outlook 2003. I need to be able to
designate which address I'm sending each message from. Changing the default
doesn't seem to do it.

There isn't an Account button in the toolbar to let you select through
which account you send your new message?
 
via the Accounts button in the Standard toolbar of the new message.
