How do I backup user profiles

Internet Explorer: v 6.0.2800.1106
Outlook Express: v 6.00.2800.1106
Single PC with 2 users.

I have 5 user profiles in C:\Documents and Settings
These are:
Administrator
All Users.WINNT
Default User.WINNT
**** second user
**** me

How do I backup all the settings for:
**** second user
**** me

Any help or advice appreciated.

You can use Microsoft NT Backup and just select those two folders.

I found a simpler method.
I copied them from my Ghost image of C Drive
