How do I add subject as an entry option

Suject has "disappeared" New e-mail layout and also from edit of Drafts. The
only"fill-in" that I have in either screen is "To:". How do I get Subject
back?
 
While composing a message go to the View menu and select "Message Header".
That should turn the fields back on
