Why so I have some choices in gepedit.msc that do not
appear in the group policies I run from the server?

For example, I don't have a choice for not showing my
computer or the recycle bin.
 
Depends on the version of Windows/gpedit on your server(s) compared to the
version of Windows/gpedit on your desktop(s)/laptop(s).
 
I have no clue how to check the verson on the server or
the workstation.
 
the template on the server is system.adm and it is dated
6/19/2003. It does not have a choice for removing
computer from the desktop.
