fonts and colours

Does anyone know if you can set the fonts and colours in outlook 2007 to your
own personal taste when you send or reply to any email automatically without
you having to put it in your self thanks as you could in 2003 one.

Same location as in previous versions;
Tools-> Options-> tab Mail Format-> Stationery and Fonts...

went there and the new message font button is greyed out and same with the
replying or forwarding messages the only one i can get to is the theme and
the composing and reading plain text messages thats it .

cool done that but only works if you have no theme as soon as you apply a
theme to it even tho you done the colours , they want work only will if its
set onto no theme is this a bug they have to fix or what.

It is implied that when you select a default theme the default font is also
specified in the theme. Overruling the default font by additional options
only adds to the confusion as you basically are modifying the theme.
