email bounced back

In Outlook 2003 when I send many emails or reply, they are bounced back with
a "failure notice" stating, The user does not accept email in non-Western
(non-Latin) character sets.
I do have SP2 installed and am not sure how to solve this dilemma. Please
help. Thank you.
