When upgrading to XP from 98me, XP assigned "F" as my
hard-drive's label.

How do I change this to "C"?

You can't. Or at least, the process involved in doing so would take 10
times as long as reinstalling your OS onto the correct drive and will more
than likely leave you with an unstable OS.

I loaded XP into one large partition that is equal to the
total size of my HD.
 
You can't change the drive letter for the system volume.
During installation Windows XP generates dependencies upon
the drive letter in the registry which prevents you from
changing the drive letter from the Disk Management console.
