Right click the Start Button on the Taskbar, select properties.
On the Taskbar and start menu click on Start Menu tab and then click on
Customize button.
On Customize settings click on Advanced Tab and make sure to click on Clear
Recent Doc and uncheck this box:
[ ] List my most recent opened documents

Thanks, but not quite there yet.

While I can clear the recent documents I am unable to uncheck the box: [ ]
List my most recent opened documents. It simply doesn't exist! Now what?

Why not just take Documents off the start menu? I use classic view and
don't like a bunch of junk on it so I use TweakUI to remove some items like
recent documents. It is under the Explorer tab.
