Document Map

I'm trying to work out what exactly is captured when you display the document
map. Is it heading styles, paragraph titles, fields?

Theoretically headings but in actuality any paragraph with an outline level
other than Body Text (see Format | Paragraph).

As far as Word is concerned, any paragraph with an outline level other than
"Body Text" *is* a heading (although it doesn't have the "magical"
properties of the built-in headings of course). :-)
