Determine who read an email

Hello,

Our LAN administrator was fired for stealing equipment from the company
about 3 days ago. Now, our president says that "someone" has been reading
his email.

Is there a way to determine WHO read an email message?

Not that I'm aware, unless you're using an in-house mail server or your
president has given his credentials to someone. I suppose someone could be
capturing all network traffic with WireShark, but if they are you've got
even bigger problems.
 
I thought that there might be some way to accomplish this on the mail server
as an administrator.

Have your president change his Windows login password on the company
domain. It is the same one used to log into an Exchange account.
